Sicilian buffalo casserole from BBQ world champion Camillo “Don Caruso” Tomanek. During the long cooking time in the Dutch oven, all the flavors develop and ensure a very special taste experience!
INGREDIENTS
for 2 people:
- 500g buffalo fillet steaks , buffalo hip steaks or buffalo topside
- 500 g pureed tomatoes
- 6 cloves of garlic
- Salt
- pepper
- oregano
- olive oil
PREPARATION
- First, mix the pureed tomatoes with the chopped garlic. Depending on your taste, you can use a little more or less garlic.
- Then you fry the buffalo meat slices, which are a maximum of 0.5 cm thick, and season them on both sides with salt, pepper and oregano.
- The next step is to layer the meat in a Dutch oven or alternatively a classic casserole dish. Add 2 tablespoons of olive oil and enough tomato sauce to each layer of meat so that the meat is completely covered. Finally, add 1/3 glass of red wine over it.
- Now close the Dutch oven or casserole with the lid and place it in the embers or alternatively in the oven. It is important to only bring the pot to the boil once and then let it simmer over low heat for 3-4 hours.
- You can have fun with the side dish according to your own taste. We prefer to enjoy the Sicilian buffalo casserole with high-quality pasta, bread or spaetzle.
