The double buffalo burger with mango chili salsa is an absolute highlight! 180 grams of juicy buffalo meat with premium buffalo mozzarella in a freshly baked brioche bun. A delicious creation by Marcel Felix (BBQlicate).
INGREDIENTS
for 2 people:
- 2 prime rib burger patties (Rib Eye Burger)
- 2 slices of buffalo mozzarella
- 1 mango
- 1 red chili
- 1 tsp honey
- Green salad
- Half a bunch of corriander
- Juice of half a lime
- Salt, pepper, sugar
PREPARATION
- Cut the mango into slices and grill briefly on both sides, then cut into small cubes.
- Finely chop the chili and coriander and mix together with the mango cubes, honey and lime juice. Season with salt, pepper and sugar and set aside.
- Grill the prime rib burgers on both sides for 60 seconds under the Otto Wilde OFB until a nice crust is formed. Then set the OFB to the lowest setting and place the patties in the fat collecting tray. Depending on the cooking point and taste, let it steep for between 5 and 10 minutes. If there is no OFB available, you can of course sear the prime rib burgers on the grill or in the pan for about 2-3 minutes per side and then let them sit in the oven at 100 degrees.
- If you like, you can briefly fry the buns on both sides and then start topping the burger. To do this, the lettuce is placed on the lower part of the bun, followed by the mango-chilli salsa followed by the juicy buffalo patty. The mozzarella now goes on the meat and a “blob” of salsa along with the top part of the bun complete the burger.
