Behind Buffalo Bill is the team around our Founder Manuel RuessThe idea to found Buffalo Bill came about after we read a newspaper article about the Handling of young male buffalo in the mozzarella industry Since the male offspring do not produce milk for mozzarella production, they were discarded immediately after birth or raised under adverse conditions without mother's milk and sufficient outdoor space. It was clear to us that there had to be another way and that this gentle animals their fate save Therefore, it was our wish to create a Contribution to sustainable and ethical meat consumption so that the customer gets to know and appreciate water buffalo meat.

An exceptional career – that's probably the best way to describe his professional career. He learned the profession of chef from the ground up in his parents' hotel kitchen.
