To ensure your meat reaches the desired doneness even on hot coals, you should use a meat thermometer: Rare is at about 48°C, medium-rare at 53°C, and medium at a temperature between 57 and 60°C. You should avoid cooking more than this with dry-aged products, as the meat will otherwise become too dry. Once you have reached your desired degree of doneness, give your steak a little break: Let it rest for five to ten minutes and seasons It is then added to allow the aroma to spread.
