The versatile buffalo tri-tip, also known as mayor's piece, is ideal for smoking, braising or even quick-frying. In this recipe, the extremely tasty cut was indirectly grilled on a bed of hay and herbs.
Ingredients
- buffalo Tri-Tip / Mayor's Piece by Buffalo Bill
- Hay cooking bowl from Axtschlag
preparation
- First, the tri-tip is taken out of the packaging, washed with cold water and patted dry.
- Now place the piece in the cooking bowl filled with the herb hay and heat the grill to approx. 160-180 degrees, setting up an indirect zone for the cooking bowl. Alternatively, an oven can also be used.
- The Tri-Tip is now wired with a core temperature thermometer (Grill Eye) and placed in the cooking dish in the indirect zone of the grill.
- As soon as the core temperature reaches around 40 degrees, take the tri-tip out of the cooking tray and briefly grill it on both sides in the direct area of the grill. If the preparation took place in the oven, this step can be carried out in a hot cast iron pan, for example.
- After grilling the outside, let the tri-tip rest briefly, then cut it into fine slices and then serve them on some colorful salad.
Bon appetite!
